High Protein Apple Cinnamon Baked Oatmeal Cups
Wholesome and delicious baked oatmeal cups loaded with protein, tender apple chunks, and warm cinnamon spice.
Ingredients
- 2 cups Rolled oats
- 4 scoops Vanilla whey protein powder
- 1 cup Liquid egg whites
- 1/2 cup Plain non-fat Greek yogurt
- 1 Medium apple, finely diced
- 1 cup Unsweetened almond milk
- 1.5 tsp Baking powder
- 1 tsp Ground cinnamon
- 2 tbsp Zero-calorie sweetener (e.g. Stevia)
Instructions
Preheat your oven to 350°F and line a 12-cup muffin tin with silicone or paper liners. In a large bowl, mix together the rolled oats, protein powder, baking powder, cinnamon, and sweetener. In a separate medium bowl, whisk together the liquid egg whites, Greek yogurt, and almond milk until smooth. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the diced apple. Divide the batter evenly among the 12 muffin cups. Bake for 22-25 minutes, or until a toothpick inserted into the center of a cup comes out clean. Let them cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
