Mexican Chicken Fajita Skillet
A classic one-pan meal featuring seasoned chicken, vibrant bell peppers, and sweet onions, ready in under 30 minutes.
Ingredients
- 10 oz boneless, skinless chicken breast, thinly sliced
- 1 tbsp olive oil
- 1 large bell pepper (any color), thinly sliced
- 1 medium yellow onion, thinly sliced
- 1 (1 oz) fajita seasoning packet
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
Instructions
Pat the sliced chicken breast dry with a paper towel. In a medium bowl, toss the chicken with half of the fajita seasoning until evenly coated. Heat the olive oil in a large skillet or cast-iron pan over medium-high heat. Once shimmering, add the seasoned chicken in a single layer. Cook for 3-4 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside. Add the sliced bell pepper and onion to the same skillet. Cook, stirring occasionally, for 5-7 minutes, or until the vegetables are tender-crisp. Return the cooked chicken to the skillet with the vegetables. Sprinkle the remaining fajita seasoning over everything and stir to combine. Cook for another 1-2 minutes until everything is heated through. Remove from heat and stir in the fresh lime juice and chopped cilantro. Serve immediately with your favorite fajita toppings like tortillas, sour cream, and salsa.
