Chicken Caesar Salad

- 2 heads Romaine lettuce
- 10 oz Grilled chicken breast
- 1/2 cup Shredded Parmesan cheese
- 1 cup Croutons
- 1/2 cup Extra virgin olive oil
- 1 Large egg yolk
- 1 tsp Anchovy paste
- 2 cloves Garlic, minced
- 2 tbsp Fresh lemon juice
- 1 tsp Dijon mustard
- 1/4 cup Grated Parmesan cheese
- 1/4 tsp Salt
- 1/4 tsp Freshly ground black pepper
- Lemon wedges
Instructions
Make the dressing: In a medium bowl, whisk together the egg yolk, anchovy paste, minced garlic, lemon juice, and Dijon mustard. While whisking continuously, slowly stream in the olive oil until the dressing is emulsified and creamy. Stir in the 1/4 cup of grated Parmesan cheese, salt, and pepper. Assemble the salad: In a large salad bowl, combine the chopped romaine lettuce, sliced grilled chicken, 1/2 cup shredded Parmesan, and croutons. Toss and serve: Pour about half of the dressing over the salad and toss gently to coat everything evenly. Add more dressing as desired. Serve immediately with fresh lemon wedges on the side.
