Tomato-Basil Shrimp Zoodles
Savor succulent shrimp and burst cherry tomatoes tossed with fresh basil and zucchini noodles in a light garlic sauce. This vibrant, low-carb meal is ready in just 20 minutes.
Ingredients
- 2 tbsp Olive oil
- 1 lb Large shrimp, peeled and deveined
- 4 cloves Garlic, minced
- 1 pint Cherry tomatoes, halved
- 2 Medium zucchini, spiralized
- 1/2 cup Fresh basil, chopped
- 1/4 tsp Red pepper flakes (optional)

- to taste Black pepper
Instructions
Heat olive oil in a large skillet over medium-high heat. Pat the shrimp dry and season with salt and pepper. Add the shrimp to the skillet in a single layer and cook for 1-2 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside. Add the minced garlic to the same skillet and cook for 30 seconds until fragrant. Add the halved cherry tomatoes and red pepper flakes (if using). Cook for 3-4 minutes, stirring occasionally, until the tomatoes begin to soften and burst. Add the spiralized zucchini noodles to the skillet. Toss gently with the tomatoes and cook for 2-3 minutes, just until the zoodles are tender-crisp. Be careful not to overcook, or they will become watery. Return the cooked shrimp to the skillet. Add the chopped fresh basil and toss everything together to combine. Season with additional salt and pepper to taste. Serve immediately.
