High Protein Baked Chicken Parmesan
Tender baked chicken breast is topped with rich marinara sauce and melted mozzarella for a healthier, high-protein take on a classic Italian-American comfort food.
Ingredients
- 4 6oz chicken breasts, pounded to 1/2-inch thickness
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 large egg, beaten
- 1 cup low-sugar marinara sauce
- 1 cup shredded part-skim mozzarella cheese
- 2 tsp olive oil
- to taste salt and black pepper
Instructions
Preheat your oven to 400°F. Line a baking sheet with parchment paper. Pat the chicken breasts dry and season both sides with salt and pepper. Set up your breading station. In a shallow bowl, whisk the egg. In a second shallow bowl, combine the almond flour, Parmesan cheese, and Italian seasoning. Dip each chicken breast first into the egg, letting any excess drip off, then press it into the almond flour mixture to coat both sides completely. Place the coated chicken on the prepared baking sheet. Drizzle evenly with olive oil. Bake for 15 minutes, or until the chicken is cooked through and the coating is golden. Remove from the oven, top each chicken breast with 1/4 cup of marinara sauce and 1/4 cup of mozzarella cheese. Return to the oven and bake for another 5 minutes, or until the cheese is bubbly and melted.
