Blackened Cod With Garlic Sweet Potato Mash

Ingredients
- 6 oz Cod fillet
- 6 oz Sweet potato
- 1 tsp Blackening seasoning
- 1/2 tsp Olive oil
- 1/4 tsp Garlic powder
- 1 tbsp Unsweetened almond milk
Instructions
Place the cubed sweet potato in a small pot and cover with water. Bring to a boil and cook for 10-12 minutes, or until fork-tender. Drain well. While the potato cooks, pat the cod fillet dry with a paper towel. Rub the blackening seasoning evenly over all sides of the fish. Heat the olive oil in a non-stick skillet over medium-high heat. Carefully place the cod in the hot skillet and cook for 3-4 minutes per side, until opaque and cooked through. Mash the drained sweet potatoes with a fork, adding the almond milk, garlic powder, and a pinch of salt and pepper. Stir until smooth.
